BRAMBLE MOUSSE 🌸💜 So easy, and it stayed light and airy even when I was pretty heavy-handed with my folding technique (according to mumma)

Recipe for BRAMBLE MOUSSE

Ingredients
🌸1/2kg blackberries
🌸100g caster sugar
🌸1 tbsp gelatine powder
🌸2 tbsp water
🌸1tbsp lemon juice
🌸150ml double cream
🌸2 egg whites

💜 put the blackberries in a sauce pan (leave a few whole to decorate) stir in the sugar and simmer over a gentle heat until soft n juicy

💜 sprinkle the gelatine over the water in a heatproof bowl. Leave for a moment till spongy then place the bowl in a pan of hot water and stir over a low heat until the gelatine has dissolved. Remove from the pan and stir in the lemon juice

💜 remove the blackberries from the heat and rub through a seive into a mixing bowl. Stir in the gelatine mixture then leave until it's beginning to set

💜 whip the cream until thick then fold into the blackberry mixture. Beat the egg whites until stiff and fold until combined. Spoon into pots and chill in the fridge until set. Top with blackberries to decorate

A supermarket seasonal arrangement for under £5 ✨️Saved from the bargain bucket in Co-op. These blooms were destined for the bin tomorrow 🚮

Some might say it's risky for me to be sharing budget-friendly tips when I'm creating weddings and designs for big brands and other floral designers. But here's the thing - most of us can't afford to buy flowers from the market. Some of us don't want to get out of bed at that time anyway 💤 ⏰️ and, isn't it all about making your day-to-day a little brighter, a little happier... romantising your life if you will 🫢 Instead of just plonking your store- bought flowers in a vase, try adding a few foraged bits from your walk. I always think when creating you just have to act confident and it will work out. So no, it's not a masterpiece, but I can tell you it will definitely make my morning a little brighter.

Happy 1 year anniversary to my wonderful friends Jack & Leanne. It feels so strange to think your wedding was a year ago now, so, so much fun was had and wish we could all be together and party all over again! 🍾 I hope you both had a wonderful, happy weekend celebrating 🥂

Thank you to Leanne for trusting me with this process! One of my biggest supporters ❤️ We ended up using a special kind of vegan silk made from orange peel! It was much heavier than regular silk which created a beautiful drape and shape for the bows. Dyed using 🌸 petals we toned the colour down until it matched the colours of the dresses.

Her bridesmaids all just so happened to have the best hair to model them too 😍👑

This tablescape for my dear friend's wedding is just pure joy! 🌸💚 captured beautifully by the brilliant @mattebbagephoto 💫 With a mixture of pinks, greens and a touch of wild grasses ~ made for the perfect, natural and relaxed setting to sit down and celebrate 🥂

We clustered bud vases to create a tangle of sweet peas, viburnum and delicate saponaria which brought a soft and romantic feel, while the green goblets and block-printed napkins (which the bride had specially made 💚) added a personal touch, thistles and shells, a nod to the bride and grooms roots respectively 🏴󠁧󠁢󠁳󠁣󠁴󠁿🐚

There's something magical about creating arrangements with flowers straight from the garden (these survived the car journey from Kent back to London) especially when they're as moody and dramatic as these deep red, burgandies and near-black blooms.

These two and the sea 🌊 happy anniversary to H&R who go married last July at the stunning @gararockhotel 🐚 The colour palette was sand and ocean spray and the brief, dried florals so they could be reused for their reception at home the next month. I absolutely loved creating for these two sailors in a place I adore too!🌊⛵️✨️
